Apple Pear Galette

A warm spiced apple and pear galette with creamy mascarpone dripping down the slices. Isn't that what you need on a cold day? Ingredients
Galette Dough
1 cup Flour
¼ cup Granulated sugar
1 tsp Salt
100g chilled unsalted Butter
3-4 tbsp Ice Water
Filling
1 sliced Apple
1 sliced Pear
3 tsp Cinnamon powder
2 tsp Clove powder
2 tsp Lemon juice
1 beaten Egg
2 tbsp Raw sugar
Mascarpone
Method
Step 1- Dough
In a bowl, sift flour, sugar and salt. Whisk all the ingredients till smooth. Then add in butter cubes. Crumble the butter into the flour using your hands or a fork.
Step 2
Then slowly add in water and knead the dough into a ball. Then cling wrap the dough and place it in the refrigerator for 3 hours or overnight.
Step 3- Filling
To a bowl, add apple and pear slices. Sprinkle cinnamon and clove powder. Coat the fruit slices thoroughly. Then add lemon juice and mix all the ingredients. Cover the bowl and let it sit for 30 minutes before baking.
Step 4
Preheat the oven to 200℃. Line a baking tray with parchment paper. Then on a slab, sprinkle some flour. Take the dough out of the refrigerator, and with a rolling pin, flatten the dough to 1-inch thickness. Transfer the dough to the baking tray.
Step 5- Assembly
Then add the filling to the middle of the dough, spreading evenly outwards, leaving 2-inch of the dough around the border. Then start folding the remaining dough, slightly overlapping the fruit. Then brush with egg wash and sprinkle raw sugar over the egg wash.
Step 6
Place the galette in the oven and bake for 25-30 minutes or till the edges are golden brown. Then take the galette out of the oven and let it rest for 15-20 minutes. Add mascarpone on top of the galette and serve.
Tips
Use only chilled butter while making the dough.
When forming the dough, it'll be crumbly at the start. Don't worry; keep adding cold water to bind the dough.
While marinating the fruit, make sure there aren't any lumps of powdered spices.
Marinating the fruits helps soften them and enhance flavours.
If you're in a hurry, you can place the dough in the freezer for 45 minutes.
You can replace the egg wash with butter and milk.
