Avocado Chia Pudding

The creamiest chia pudding is at your fingertips with just a few steps and zero stove time. You can make this delicious super healthy chia pudding in no time. The creamy avocado combined with gooey chia seed and hints of cinnamon makes this pudding so desirable. This is my go-to chia pudding recipe, and I often make it. Give this beautiful pudding a try; you won't regret it.

Serves: 2

Ingredients

¼ cup Chia seeds

½ cup Almond milk

1 Avocado

2 tsp Cinnamon

Pinch of Nutmeg

⅓ cup Almond Milk

2 tsp Maple syrup


Method

Step 1- Chia Seeds

To a jar, add chia seeds and almond milk. Seal the jar and shake well till all the seeds are submerged in milk. Place in the refrigerator for 3-4 hours or overnight.



Step 2

With a sharp knife, cut the avocado lengthwise around the seed. Separate the two halves exposing the seed. Then strike the seed with the knife and twist the seed. Now lift the blade up and discard the seed. Slice the avocado.


Step 3- Avocado puree

Add avocado slices, maple syrup, cinnamon, nutmeg, and almond milk to a blender. Then blend smooth till thick paste-like consistency.


Step 4- Assembly

Add half of the avocado puree into a serving jar, spreading evenly on the base. Then half of the puffed chia seeds, and then another layer of the avocado puree and top with some berries and coconut shreds.


Tips

  1. When soaking the chia seeds, make sure there aren't any lumps.

  2. You can replace almond milk with oats milk.

  3. You can adjust the quantity of maple syrup according to taste.

  4. Use ripen avocados only.
