Banana Bread French Toast
The perfect Sunday brunch is a heartwarming plate of banana bread french toast. A little crunch on the outside and a gooey cinnamon-spiked bread on the inside. This french toast recipe will be the best for your banana bread, and it hardly takes any cooking time or ingredients. You might find cooking the french toast in coconut oil a little out of the ordinary, but I can attest that coconut oil leaves hints of richness and gives a perfect crispy layer. Serves: 4
Ingredients
8 slices Banana bread
4 Eggs
1 ½ cup Milk
1 tbsp Vanilla extract
6 tsp Vanilla sugar
4 tsp Cinnamon powder
1 tsp Nutmeg
1 tbsp Coconut oil
Strawberries
Blueberries
Chocolate ganache
Powdered sugar
Method
Step 1
Add egg, milk, cinnamon powder, vanilla sugar, nutmeg, and vanilla extract to a bowl. Whisk everything together till a smooth paste. Then in a deep tray, place banana bread slices. Drizzle the french toast batter and let them sit for 20 minutes. Flip the bread after 10 minutes.
Step 2
Then grease a pan with coconut oil, place on medium heat and add one slice of batter-dipped panettone. Cook for 2-3 minutes or till golden brown on each side. Repeat the process until all the slices are cooked.
Step 3- Assembly
Serve the french toast with strawberries, blueberries and a big dollop of chocolate ganache. Sprinkle with some powdered sugar and enjoy with a hot cup of coffee.
Tips
Whish the batter smooth and avoid streaks of yolk.
Soak the bread in the batter to get a soft, flavourful centre.
If the pan gets too hot, sprinkle some water to prevent the burning of French toast.
You can replace the coconut oil with butter.
