Banana Choco-chip Muffins

The most loved muffin in the world, a moist, fluffy banana choco-chip muffin. It's super easy to make and only takes 5 minutes to get the batter ready and in the oven. These muffins melt in your mouth and explode with flavour. The dark chocolate and banana are a duo that can never go wrong and disappoint. If you're looking for an easy, quick dessert recipe, you're at the right place.

Serves: 12

Ingredients

2 cups Flour

1 Egg at room temperature

2 ripe Bananas

½ cup Brown sugar packed

⅔ cup of Dark choco-chips

Pinch of Salt

1 tsp Baking soda

1 tsp Baking powder

2 tsp Vanilla extract

¼ cup + 2 tbsp melted unsalted Butter


Method

Step 1

Sift flour, baking soda, baking powder, and salt in a large bowl. Whisk well together. Preheat the oven to 190°c. Line muffin tray with cupcake liners.


Step 2

In a bowl, mash the bananas with a fork. Add sugar, eggs and slightly cooled melted butter. Mix well with a rubber spatula.


Step 3

Make a well and add your banana mixture to the dry ingredients. Start mixing with a fork. Don't worry if the batter is sticky. Keep mixing until all the flour is mixed in.


Step 4

Now add the choco chips and mix well with a rubber spatula. Now fill ⅔ of the batter in the liner, and add some choco chips on top.


Step 5

Bake for 15-17 minutes. To check if the muffins are done by inserting a toothpick in the middle; it should come out clean.


Step 6

Place the muffins on a cooling rack once baked. Let them cool down, then serve warm.


Tips

  1. Fully ripened bananas add more flavour to the muffins, are also accessible to mash and are sweeter.

  2. Using a fork makes it easier to mash the bananas and mix them in sugar with zero air incorporation.

  3. Don't skip adding chocochips on the top of the muffins before baking.
