Black Forest Pancakes
Inspired by the classic black forest gateaux, these decadent chocolate pancakes are filled with fresh whipped cream and sweet cherry compote. The pancakes are soft and fluffy and ooze chocolate. The cherry compote is sweet and sour. The fresh whipped cream adds a silky, smooth texture. This stack of pancakes is rich and delicious. You can't have a cake for breakfast, but you definitely try these pancakes!

Ingredients
Pancakes
1 cup Flour
¼ cup Cocoa powder
Pinch of Salt
¾ tsp baking Soda
¼ tsp baking Powder
⅓ cup granulated Sugar
1 cup Milk
1 Egg
1 tsp Vanilla Extract
Cherry Compote
1 ⅓ cup pitted Cherries
2 tbsp Lemon juice
1 tsp Lemon zest
¼ cup granulated Sugar
⅓ cup Water
Whipped Cream
1 cup Heavy cream
Method
Step 1- Pancake
Add egg, milk and cooled melted butter to a bowl. Whisk smooth and with no lumps. Sift flour, cocoa powder, baking soda, baking powder, and salt in another bowl and whisk till smooth.
Step 2
Grease a non-stick pan with butter, place on medium heat, and drop ¼ cup of pancake batter in the middle. Flip the pancake once bubbles appear on the surface and cook for 2-3 minutes. Repeat the process till the desired number of pancakes is achieved.
Step 3- Cherry Compote
Add cherries, lemon juice, zest, sugar and water to a saucepan—Reserve ¼ of the cherries for later. Place the sauce on medium heat and let the cherries cook till they are soft and mushy.
Step 4
Stir occasionally to prevent the compote from sticking to the bottom. Then add the rest of the cherries and cook for another 3-4 minutes. Then take off the heat and let the compote cool down.
Step 5- Whipped cream
Place a mixing bowl and beaters in the freezer for 30 minutes. Then add in heavy cream and beat on medium speed till stiff peaks.
Step 6- Assembly
Place a pancake in the middle of a plate, add ¼ of the whipped cream, and spread evenly. Add 2 tbsp of cherry compote in the middle and repeat the steps till the desired pancake stack is ready. Add fresh cherries and grated chocolate on top and serve.
Tips
Cool the melted butter before adding it to the milk; eggs have it solidify and cause lumps.
When greasing the pan, make sure not to use too much or too little butter. Too much butter and too little might cause the pancake to burn.
Only flip the pancake when you see bubbles appear on the surface.
When cooking the compote, stir occasionally and adjust the heat accordingly.
