Buffalo Loaded Fries

A plate full of crispy fries drenched in a homemade cheese sauce and loaded with spicy, tender buffalo chicken. The tender chicken is soaked in a hot sauce that is super easy to create and can be used as a day to day condiment. Overloading on this cheese sauce can have euphoric effects. This plate of buffalo loaded fries is a great appetizer waiting to be served!

Serves: 3

Ingredients

350g French fries

Buffalo Chicken

250g bite-size Chicken

1 tbsp Lemon juice

2 tsp Paprika

2 tsp Chilli flakes

Salt to taste

Hot Sauce

25g melted Butter

1 ½ tbsp Brown sugar

¼ cup Siracha

Cheese Sauce

3 tsp Flour

25g salted Butter

1 ½ cup Cheddar

1 cup Milk

Spring Onions

Bacon bits


Method

Step 1- Fries

Bake the fries according to the instructions given on the packaging.


Step 2- Buffalo Chicken

Add lemon juice, bite-size chicken pieces, salt, paprika and chilli flakes to a bowl. Coat the chicken thoroughly and cover the bowl—place in the refrigerator for a minimum of 2 hours or overnight.


Step 3

Grease a pan with oil and place on medium heat. Then add the chicken to the pan. Cook the chicken for 5-7 minutes or till slightly golden brown. Remove the chicken from the pan and shred the chicken.


Step 4- Hot sauce

Combine melted butter, sriracha and brown sugar in a bowl. Then drizzle over the shredded chicken and combine well.


Step 5- Cheese Sauce

Add butter to a saucepan and place on medium-low heat. Once the butter melts, add flour and whisk. Then add milk and whisk continuously until smooth. Reduce the heat to low and add cheddar cheese. Whisk the sauce till smooth and thick.


Step 6- Assembly

Spread the fries on a tray and add shredded buffalo chicken. Mix well, and then drizzle the cheese sauce over the fries. Add fresh spring onion and crispy bacon bits, and serve immediately.


Tips

  1. Marinating the chicken enhances flavour and texture. Don’t skip this step.

  2. To check whether the chicken has cooked, insert a meat thermometer that should read 74℃.

  3. You can replace brown sugar with honey for the hot sauce.

  4. Whisking is key to a smooth cheese sauce.

  5. Cook the sauce on medium-low or low heat to prevent it from burning.

  6. You can adjust the salt in the cheese sauce according to taste.

  7. Combine the cheese sauce and fries right before serving.
