Bánh mì

A Vietnamese delicacy contains numerous flavours wrapped in a French baguette. A great thing about the banh mi sandwich is that you can adjust flavours according to your palette requirements. It's so fresh and healthy; most of the ingredients used in the Bánh mì are readily available in most supermarkets. You can fetch them and assemble a beautiful sandwich with mind-blowing flavours.

Serves: 4

Ingredients

250g Pork Butt

Marination

5 tbsp Soya sauce

2 tbsp Fish sauce

1 tbsp Chilli paste

2 tbsp Honey

2 chopped Garlic cloves

1 inch chopped Lemongrass

Pickle

2 julienne Carrots

½ julienne Daikon

3 tbsp Sugar

2 tbsp Salt

200ml Rice Vinegar

1 Baguette

Pâté de Campagna

Mayonnaise

1 sliced Cucumber

Coriander

3 sliced Bird’s Eye Chilli

Maggi Seasoning

1 tbsp Soya sauce

1 tbsp Worcestershire Sauce


Method

Step 1- Pickle

In a pan, add 3 cups of water. Place on medium heat and add sugar, salt and vinegar. Bring to a simmer. Take off the heat.


Step 2

Pour the water into a bowl. Then add carrots, daikon, and cling, wrap the bowl and place overnight.


Step 3- Marination

Add soya sauce, fish sauce, chilli paste, honey, garlic and lemongrass to a bowl. Mix well.


Step 4

Cut your pork butt into thin slices. Place them on a paper towel and remove the excess moisture. Then place in the marinate. Place in the refrigerator for 1 hour or overnight.


Step 5

Preheat the oven to 200℃ at the grill setting and place parchment paper on a baking tray. Add the pork butt slices to the tray.


Step 6

Then place in the oven and bake for 10-12 minutes. Take the tray out and let the pork rest for 10-15 minutes.



Step 7- Maggi Seasoning

In a bowl, add soya sauce and Worcestershire sauce and mix well. Keep aside.


Step 8- Assembly

Cut your baguette into 4 parts and slice it in the middle. Now spread the pate on the base, then add 1 tbsp mayonnaise spread evenly. Then add two slices of your pork cuts.

Add 3-4 pickled carrots, daikon and cucumber. Add a stem of fresh coriander and 2-3 slices of bird's eye chilli. Drizzle the Maggi seasoning and serve.


Tips

  1. While making the pickle, they don't boil the water; bring it to a light simmer.

  2. You can also pan-fry your pork by slightly greasing the pan and cook on medium heat till thoroughly cooked.

  3. You can also use store-bought Maggi seasoning.
