Choco-chip Caramel Cookie

This cookie sandwich has chocolate and potato chips, a unique blend of flavours that combine to give touch your inner child. These cookie sandwiches make for a beautiful sweet-salty dessert; they transport you to your summer days where you enjoy potato chips and chocolate bars—Gooey in the middle, crunchy on the outside, and filled with a generous amount of salted caramel. If you love a little salt in your sweet, this recipe is made for you!

Serves: 2 dozen

Ingredients

Cookies

2¼ cup flour

1 cup milk chocolate chunks

¾ brown sugar

½ granulated sugar

½ tsp baking soda

½ tsp salt

2 eggs

2 tsp vanilla extract

225g unsalted butter

½ cup crushed potato chips

½ cup milk chocochips

Salted caramel

1 cup granulated sugar

½ cup water

50g salted butter at room temperature

½ heavy cream


Method

Step 1 - Cookies

Fill a saucepan with ¼ water, and put it to a boil. In a heatproof bowl, add the chocolate chunks.

Once the water starts boiling, place the bowl over the saucepan. Make sure the bowl isn't touching the water. Turn the heat to low and let the chocolate melt. Once melted, keep aside.


Step 2

In a bowl, sift flour, baking soda and salt. Whisk well. Add your butter, brown sugar and granulated sugar to another large bowl. With a hand, the mixer blends the sugars with the butter at medium speed till creamy. Now add your slightly cool melted chocolate and mix again. Wipe down the bowl from time to time.


Step 3

Then add one egg at a time, blending it well. Followed by your vanilla extract. Wipe down the bowl and mix again. Now add ⅓ of your dry ingredients at a time. Blending on medium-low speed all three times. Once all your ingredients are mixed well, add your crushed potato chips and choco-chips and mix with a rubber spatula. Then seal your bowl and place it in the refrigerator for 1 hour.


Step 4- Salted Carmel

While your dough is resting, make the salted caramel. In a saucepan, add water and granulated sugar. Place it on medium heat and cook till all the sugar is dissolved. It takes about 3-5 minutes, and the consistency thickens.


Step 5

Once the sugar dissolves, add your butter to the pan; right after all the butter melts, start whisking. Bring the mixture to a boil. Once the sauce comes to a boil, stop whisking, reduce the heat to medium-low, and cook till the sauce becomes light amber in colour.


Step 6

Now take the pan off the heat and slowly start adding your heavy cream while simultaneously whisking the sauce. Now let your sauce rest for 15-20 minutes to thicken. Preheat your oven to 180°c. Line your tray with parchment paper.


Step 7

Then take 1 Tbsp of the cookie dough, roll it into a ball and place it 3 inches apart. Place the tray into the oven and bake for 11-13 minutes or till the edges are slightly brown. Now take your cookies out of the oven, transfer them to a cooling rack, and let them sit for 10-15 minutes.


Step 8 - Assembly

Take 2 tsp of your salted caramel spread on the bottom half of one cookie, place the other on top and repeat the process till the desired number of sandwiches are obtained.


Tips

  1. Once the caramel sauce boils, don't whisk the sauce, but you can tilt the pan occasionally.

  2. Refrigerating the dough is essential for a stable structure; don't skip that step.
