Chia Pudding

This chia pudding is simple yet has bursts of flavour, and Berry coulis compliments the cinnamon-flavoured chia. This pudding is perfect for people you meal prep, and it can last up to 5 days in the refrigerator. Almost anything goes with the flavours of this chia pudding; try today to find your tastes!

Serves: 2

Ingredients

Chia Pudding

½ cup Chia pudding

2 cups Almond milk

1 ½ tsp Cinnamon powder

Pinch of Nutmeg

2 tbsp Maple syrup

Berry Coulis

1 ¼ cup frozen mixed Berries

2 tbsp Lemon juice

2 tbsp Sugar/Honey

Fresh Blueberries

Fresh Raspberries

Fresh Blackberries


Method

Step 1- Chia Pudding

Add chia seeds, cinnamon powder, nutmeg and maple syrup. Mix well and add almond milk to the bowl. Then whisk all the ingredients together. Cling wrap the bowl and place it in the refrigerator overnight.


Step-2 Berry Coulis

Thaw your berries and add to a blender with lemon juice and sugar. Blend till smooth. Then strain the coulis and discard the seeds. Keep aside till plating.


Step 3- Assembly

Add 2 tbsp of the berry coulis in a glass, then layer with ½ cup chia pudding. Top with 1 tbsp berry coulis, fresh blueberries, raspberries and blackberries. Sprinkle some coconut shavings and serve.


Tips

  1. You can use any plant-based milk.

  2. You can use fresh berries instead of frozen berries.

  3. Straining the berry coulis gives a smoother texture.

  4. The only plate before serving.
