Chicken in Mushroom Sauce

Comfort food brings joy to the heart and tummy. It's easy to cook and everybody loves it. This one-pot chicken in mushroom sauce is a perfect dinner to kick back and enjoy. The lightly seared chicken is seasoned with basic spices. The cream mushroom sauce hardly takes 5 minutes to put together. You can cook this meal in a rush and then on relax on the couch. The mushrooms in the recipe are a bridge between the sauce and the chicken. They are cooked in chicken fat and then lightly toasted in the sauce. Trust me, try this recipe if you're craving a delicious easy dinner.

Serves: 3

Ingredients

Marination

350g Chicken thighs

½ Lemon

1 tsp black Pepper

1 tsp Salt

1 ½ tsp Garlic powder

1 tsp Ginger powder

Sauce

1 cup sliced Mushroom

2 tsp chopped Lemon thyme

1 tsp chopped Rosemary

3 minced Garlic cloves

1 cup Heavy cream

2 tbsp Dijon mustard

1 tsp black Pepper

Salt to taste

1 tsp Chilli powder

2 tsp Oil


Method

Step 1- Marination

Add salt, black pepper, garlic powder and ginger powder to a bowl. Then squeeze the lemon over the powders and mix well. Add in the chicken thighs and coat well. Then cling wrap the bowl and place in the refrigerator for 2 hours or overnight.


Step 2

To a pan, add 2 tsp oil and place on medium-high heat. Once hot, add the chicken and cook it for 5-6 minutes or until it’s lightly brown on both sides and cooked thoroughly. Flip the chicken every 2 minutes. Then take it off the heat and keep it aside.


Step 3- Sauce

In the same pan, add the mushrooms and cook for 3-4 minus or till they are golden brown on both sides. Don’t crowd the mushrooms. Once brown, take them off the heat and keep them aside.


Step 4

Add in the minced garlic and cook till almost brown. Then pour in heavy cream. Add thyme, rosemary, salt, black pepper and red chilli powder. Stir all the ingredients together and bring the heavy cream to a boil.


Step 5- Assembly

Add in the mushrooms and stir into the sauce. Cook for 1-2 minutes, then add the chicken and ensure the sauce covers the chicken thoroughly. Cook for another 1-2 minutes, then take off the heat. Sprinkle some freshly chopped basil and serve hot.


Tips

  1. Marinating the chicken elevates the texture and flavours.

  2. Let the chicken marinate overnight for the best results.

  3. The thermometer should read 74°C to know if the chicken is done. Otherwise, cut a piece of chicken, press the knife against it, and check if the fluid is transparent.

  4. If you crowd your mushrooms, you won’t get an even browning on the surface.

  5. You can replace lemon thyme with normal thyme and ½ tsp lemon zest.
