Chicken Subway

A deli-like chicken sandwich is made with juicy, tender marinated chicken, crunchy fresh veggies, and homemade sauce for this subway. This recipe is quick to make and uses readily available ingredients. All the elements go together to create a wholesome experience for your palette and take you back to your local deli sitting right at home.

Ingredients
Marination
500g chicken
2 tsp onion powder
2 tsp garlic
2 tsp all-purpose seasoning
2 tsp dried basil leaves
1 tsp Cajun
2 tsp Chilli powder
2 tsp salt
2 Tbsp yoghurt
1 Tbsp lemon juice
Sauce
3 Tbsp mayonnaise
1 Tbsp Aioli sauce
2 Tbsp mustard
1 Tbsp crushed Chilli sauce
1 minced garlic clove
2 tsp parsley
1 tsp lemon juice
½ sliced Red bell pepper
½ sliced Yellow bell pepper
½ sliced Green bell pepper
½ Red sliced onion
½ cup chopped Lettuce
3 Cheese slices
3 Subway bread
Method
Step 1 - Chicken
Clean your chicken well. Cut into bite-size pieces.
Step 2
In a bowl, take yoghurt, and lemon juice, add onion powder, garlic powder, all-purpose seasoning, dried basil leaves, Cajun, and chilli powder and mix well.
Step 3
Now add the chicken to the marination, and mix well. And keep it in the refrigerator for 2 hours or overnight.
Step 4
Add 2 Tbsp of oil to a pan. Once hot, add the chicken pieces. Cook until the chicken has a golden brown layer and is fully cooked. Keep aside.
Step 5 - Sauce
Add mayonnaise, mustard, crushed Chilli paste, aioli, garlic, parsley, and lemon juice in a bowl. Mix well.
Step 6
Once the chicken has cooled down, cut it into small pieces, then add it to the sauce—Preheat the oven to 180°c. Line a baking tray with parchment paper.
Step 9
In the subway, bread adds cheese slices. Then place in the oven and bake for 10 minutes.
Step 10 - Assembly
Take the subway bread, and line it with lettuce, bell peppers, onions and the chicken mix.
Serve with ketchup and mustard.
Tips
Marinating the chicken enhances the flavour and tenderizes the chicken. Don't skip this step.
While cooking the chicken, ensure you don't overcook the chicken. To check if the chicken is done, make a tiny cut and press your knife against the cut; the fluids should be transparent. Or insert a thermometer in the middle, which should read 165° F.
