Chilli Con Lasagne

A beautiful blend of two cultures is coming together to create this fantastic dish. Italian lasagne meets Mexican beef chilli, and magic is born. This lasagne is so indulging you can't wait to dig in. It might take some time to come together, but the wait is a beautiful journey. If you're looking for a main dish for your big dinner, you have found the perfect one!

Serves: 8

Ingredients

Chilli Con Carne

500g minced Beef

2 chopped Onions

400g pureed Tomatoes

2 cups Black kidney beans

2 Garlic cloves chopped

1 Carrot chopped

2.5 tsp Cajun

2 tsp Garlic powder

3 tsp Paprika

2 tsp Oregano

2 tsp Cumin

Salt to taste

2 cups Beef stock

9 Lasagne sheets

2½ cups Cheddar

Guacamole

2 Avocado

½ Tomato chopped

½ Red Onion chopped

2 tsp Black pepper

2 tsp Lemon juice

Salt to taste

Sour Cream


Method


Step 1- Chilli Con Carne

Add oil to a deep bottom pan; add onion, carrots, and garlic once hot. Cook till the onions are transparent, and carrots are soft.


Step 2

Then add your tomato puree, and mix well. Reduce the heat to medium-low and cover the pan. Cook till the puree starts to bubble.


Step 3

Add ½ cup water and simmer the puree. Once the water reduces, add Cajun, paprika, garlic powder, oregano, cumin and salt. Mix well and cook for another 2-3 minutes.


Step 4

Then add black beans and mix well. Add 1 cup of beef stock. Place the lid back and cook for 20 minutes.


Step 5

Then add your beef to the chilli, break the chunks and mix well. Add another cup of stock, place the lid back and cook for another 20 minutes.


Step 6 - Lasagne

Then take the pan off the heat—Preheat the oven to 200°c. In a 14x9 glass dish, add a little chilli on the base, and spread evenly.


Step 7

Place 3 lasagne sheets, and cover with ⅓ of the chilli con carne. Then repeat the process once again.


Step 8

On the top most lasagne sheets, add leftover chilli con carne and beef stock and cover with cheese. Then place in the oven and bake for 25-35 minutes or till the cheese browns.


Step 9

Take the lasagne out of the oven and let it rest for 20-30 minutes.


Step 10 - Guacamole

Split the avocado into two with a knife and take out the seed. Then scope the flesh with a spoon and place it in a bowl.


Step 11

Then add tomato, onions, pepper, lemon juice and salt. Mash thoroughly.


Step 12

Cut a slice of the lasagne, add 1 tbsp of guacamole and sour cream and serve.


Tips

  1. Add softened black beans.

  2. Simmer the chilli on low heat. The more you cook the chilli, the better it'll taste.

  3. Don't skip on greasing the base of the dish with chilli; otherwise, the lasagne sheets will stick to the bottom.

  4. Covering the topmost layer of lasagne with a bit of chilli con carne and beef stock is essential; otherwise, the sheets will become hard.
