Chilli Dogs
Turn the heat up and indulge in a flavored packed experience with these ultimate chilli dogs. Chilli is best done when it's been cooked for hours on end! All the flavours come out one by one to loop you further in its spell. The herb-loaded sausage compliments this spice-heavy chilli, creating a supreme chilli dog. These hotdogs are best served at bbq or game night. The hotdogs are delicious, mouth-watering treats but tend to get messy! These sloppy hotdogs always get a win at the table.

Ingredients
Chilli Con Carne
1 tbsp Olive oil
2 minced Garlic cloves
1 small chopped Onion
1 medium chopped Carrot
1 cup Tomato puree
1 ½ cups Pinto beans
1 cup Beef stock
200g minced Beef
2 Bay leaves
1 tsp Cumin powder
½ tsp Coriander powder
1 tsp Paprika powder
Salt to Taste
Hotdogs
10 herbed Sausages
10 Hotdog Buns
1 cup shredded Cheddar
1 sliced Jalopnoes
Method
Step 1- Chilli Con Carne
Add oil to a saucepan and place on medium heat. Once hot, add minced garlic and cook until golden brown. Then add in chopped onion and cook till transparent. Stir occasionally to avoid burning. Now add in chopped carrots and cook till the carrots are semi-soft.
Step 2
Add tomato puree and bay leaves to the pan and cook till the puree is reduced to half its volume. Then add ½ cup of water, cover the saucepan with a lid, and reduce the heat to medium-low. Stir occasionally to avoid burning.
Step 3
Once the puree reduces to ¼ its volume, reduce the heat to low. Add in cumin powder, coriander powder, paprika powder and salt. Stir well and add ¼ cup water. Return the heat to medium, add pinto beans, and let the chilli simmer for 2-3 minutes.
Step 4
Then add minced beef, and break it into chunks with your spatula. Then add beef stock and reduce the chilli on medium-low heat until thick. Stir occasionally to avoid burning. Once the chilli is reduced to half, remove the heat and keep it aside.
Step 5- Hotdogs
Add oil to a pan and place on heat. Then add your sausages and cook til golden brown. Add the sausages to hotdog buns and preheat the oven to 180℃ for 10 minutes. Meanwhile, add 3-4 tbsp of chilli to the hotdogs and add desired amounts of shredded cheddar.
Step 6
Place the chilli dogs on a baking tray and in the oven for 5 minutes or till the cheese melts. Then add jalapenos slices on top and serve hot with mustard and ketchup.
Tips
Make sure to keep an eye on the pot when cooking garlic. It can burn quickly. You can also use 2 tsp ginger garlic paste as a substitute.
When adding spices, make sure the heat is always low. Otherwise, you might end up burning them.
The longer you simmer your chilli, the better it'll take.
Discard the bay leaves when topping the hotdogs with chilli.
Cook the sausages according to the instructions given on the packaging.
