Chorizo Sandwich

Chorizo is a Spanish sausage containing pork, paprika and garlic. It holds excellent flavours and is a delight to eat. This sandwich works around the flavours of the sausage. It's one of my favourite sandwiches to make at the weekend. It's filled with fresh ingredients that compliment the meat. The sauces give a slight touch of tangy flavours to tickle your palette—a perfect sandwich to have.

Serves: 4

Ingredients

2 Chorizo Sausage

1 chopped brown Onion

2 chopped Garlic cloves

1 tsp Onion powder

1 tsp Garlic powder

Pinch of Salt

2 tsp dried Parsley

4 tbsp Aioli

3 tbsp Chipotle

1 tsp Lemon juice

2 tbsp Beetroot mayonnaise

Tomato slices

Red onion slices

Fresh Basil leaves

4 Buns


Method

Step 1

Slit the sausage in the middle and remove the casing. Mash the meat into fine pieces. Then in a pan, heat 2 tbsps of olive oil. Place the pan on medium heat; once hot, add garlic and cook till golden brown. Cook till the garlic is golden brown.


Step 2

Now add onions to the pan and cook till they are golden brown. Season the onions with garlic powder, onion powder and salt. Then mix well and add the chorizo. Cook for another 4-5 minutes and garnish with some parsley.


Step 3

Add aioli, chipotle, lemon juice, and beetroot mayonnaise to a bowl. Mix till smooth. Cut the bun into two halves. Add a generous amount of sauce and chorizo filling to one-half of the bun. Then top with some tomato slices, onion slices and basil leaves. Cover the with the other half of the bun and serve.


Tips

  1. Remove the sausage casing thoroughly.

  2. While cooking the sausage, make sure to keep an eye. You can easily overcook the meat.

  3. Basil brings out fantastic flavours in the sandwich; try not to skip on it.

  4. There's no limit to how much meat goes in one sandwich.

  5. You can toast your buns if you like.
