Coffee Crepes

If you love coffee for breakfast, you need to add it to your crepes. The bitter coffee with the coarse wholemeal flour might not sound appealing but wait till you pair it up with the sweetness of berry compote and the thick drizzle of chocolate. They become heavenly. These crepes are soft as pillows yet bare these out-of-the-world flavours. Don't drink your coffee next time; make these crepes and let them take a joy ride.

Serves: 4

Ingredients

Crepes

⅔ cups Wholemeal flour

⅓ cup Plain flour

¾ cup Milk

2 tbsp soften Butter

2 Eggs

¼ cup Granulated sugar

1 shot Espresso

1 tsp Vanilla extract

Berry Compote

2 tbsp Granulated sugar

1¼ cup Berries

½ Lemon

Chocolate Sauce

½ cup Dark chocolate

½ cup Milk chocolate

Method

Step 1- Crepes

Add wholemeal flour, plain flour, milk, butter, eggs, sugar, espresso shot, and vanilla extract to a mixing bowl. Whisk till a smooth batter.


Step 2

Place a pan on high heat. Once hit, reduce the heat to medium and grease with butter. Add ¼ cup of batter to the middle of the pan. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook for 2 minutes on each or till the edges turn slightly brown.


Step 3- Berry compote

Add 1 cup of berries, sugar, lemon juice, and water to a saucepan. Place on medium heat. Occasionally mash the berries. Once the berries turn to complete mush, add the rest of the berries and cook till soft. Take off heat and keep aside.


Step 4- Chocolate sauce

Fill a saucepan with water and place on heat. In a heatproof bowl, add dark chocolate and milk chocolate; once the water starts boiling, turn the heat to low and place the bowl on top of the pan. Melt the chocolates together till smooth. Take off the heat.


Step 5- Assembly

Fill the crepes with berry compote. Fold them into triangles and drizzle hot chocolate sauce. Serve with some fresh berries.


Tips

  1. Sift the dry ingredients to avoid lumps in the batter.

  2. Heat the pan for 2-3 minutes before greasing with butter.

  3. Tilt the pan in a circular motion the get the batter to spread evenly.

  4. While making the compote, do not burn the berries; keep an eye on the heat and stir occasionally. Use a rubber spatula for best results.
