Cold Chicken Sandwich

A perfect picnic sandwich will double the number of people on your next picnic. Filled with creamy chicken and crunchy veggies. This mind-blowing sandwich will become the highlight of your day. The sauce compliments the flavours of the chicken and provides a creamy base. You can make the filling a day ahead and assemble the sandwiches on the go. Serves: 4

Ingredients

Marination

500g Chicken breasts

2 tsp coriander powder

1 tsp all-purpose seasoning

1 tsp garlic powder

1 tsp Chilli powder

1 tsp onion powder

Salt to taste

2 tbsp lemon juice

1 tbsp oil

Sauce

½ cup mayonnaise

2 tbsp thousand islands

2 tbsp mustard

2 tbsp Jalapeno sauce

½ tbsp all-purpose seasoning

200g Coleslaw mix


Method

Step 1- Marination

Add lemon juice, coriander powder, all-purpose seasoning, garlic powder, Chilli powder and onion powder to a bowl.


Step 2

Now slice the breast from the middle making two equally thick portions of the breast. Then cut into 2-inch slices.


Step 3

Add chicken slices to the marination. Coat well, then cover the bowl and place in the refrigerator for 2 hours or overnight.


Step 4

In a pan, heat oil and place on medium-high heat. Once hot, add chicken slices to the pan. Then cook for 3-4 minutes on each side and keep aside.


Step 5

Then shred the cooked chicken. Add mayonnaise, mustard, thousands island, jalapeno sauce, all-purpose seasoning and shredded chicken to a bowl and mix well.


Step 6- Assembly

Spread the chicken filling on the bread, add some fresh coleslaw mix and cover with another piece of bread. Serve with sauce of choice.


Tips

  1. Marinating the chicken brings out more flavour; don't skip this step.

  2. The thermometer should read 74°C to know if the chicken is done. Otherwise, cut a piece of chicken, press the knife against it, and check if the fluid is transparent.

  3. You can shred the chicken in a food processor or use two forks.
