Homemade Custard

Custard is a heart-warming dessert; it's silky, rich and luscious. It is a highly versatile dessert; it can be served as a side sauce, pudding, cake filling or just as it is. You can make custard at home without any custard powder in just 4 easy steps. All the ingredients are readily available; all you require is a whisk and nothing else. Custard can be made in under 30 minutes; it's the best last-minute dessert. You create beautiful desserts with a few adjustments to this basic custard recipe.

Serves: 4

Ingredients

4 Egg yolks

⅓ cup Granulated sugar

1 tbsp Vanilla extract

2 cups Full Fat Milk

¾ Heavy cream

1 ½ tbsp Cornflour

3 tbsp Water

Fresh Berries


Method

Step 1

In a heatproof bowl, add egg yolks, sugar and vanilla extract. Whisk well until smooth and all the sugar is dissolved. Then in a saucepan, add heavy cream and milk, place on heat and bring to a boil.


Step 2

Then add ¼ cup boiled milk and heavy cream to the yolk mixture while whisking continuously. Then place the custard back in the pan and place the pan on medium-low heat, and bring to a light simmer. Whisk occasionally.


Step 3

Add cornflour and water to a bowl and stir until lump-free. Then add it to the custard and whisk continuously till the custard thickens. Cook for another 3-4 minutes, then remove the heat.


Step 4

Cover the surface of the custard with cling wrap and let it rest for 20 minutes. Then transfer to serving bowls and garnish with fresh berries and serve!


Tips

  1. Whisk the yolk continuously after adding boiled milk and cream to avoid scrambling.

  2. Ensure your cornflour slurry is lump-free.

  3. Stir the custard occasionally to avoid it sticking to the bottom of the pan.

  4. To check if your custard is done, dip a spoon, which should coat the back of the spoon.

  5. If you're worried about lumps in the custard, you can strain it through a sieve.
