Honey Pear Muffins

These honey pear muffins are ultra-soft, fluffy and delicious. The warm toned spices and pear are the perfect remedy to escape the winter blues for a few moments and let the comforting spices wrap you in a blanket of pure joy! The honey adds a touch of sweetness and enhances the delicate flavours of the pear. This recipe is tailormade for those who enjoy subtle sweetness in their desserts. With a handful of ingredients, you can create the perfect dessert that leaves you amazed every time. This super-easy muffin recipe brings a touch of magic to your tea parties.

Ingredients

Caramelised pears

2 chopped Red Pears

3 tbsp Tea Tree Honey

4 cloves

Muffins

2 cup Flour

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Cinnamon powder

¼ tsp Cloves

Pinch of Nutmeg

Pinch of Salt

½ cup Brown Sugar

2 tbsp Tea Tree Honey

2 cup Almond Milk

1 Egg

½ cup + 2 tbsp unsalted Butter

24 red Pear Slices

Method

Step 1- Caramelised Pears

Add honey to a saucepan and place on medium-low heat. Once the honey turns liquid add in cloves and chopped pears. Turn the heat to medium and cook until the pears turn golden brown and slightly soft. Takes 4-5 minutes. Then turn off the heat and keep aside.


Step 2- Muffins

Preheat the oven to 180°c and line a muffin tray with cupcake liners. Add melted butter, tea tree honey and brown sugar to a mixing bowl and whisk till lump-free. Then add in egg and beat till the batter is thick and all ingredients are fully incorporated.


Step 3

Sift, flour, baking soda, baking powder, cinnamon powder, clove powder, nutmeg and salt in a separate bowl. Now add ⅓ of the dry ingredients into the batter and whisk till lump-free. Then add ⅓ of the almond milk and whisk till fully incorporated. Repeat till all the ingredients are added to the batter. Then add in the caramelised pears and fold into the batter.


Step 4

Add 4-5 tbsp of the batter into the cupcake liners then place in 2 pear slices on the batter and then cover the slices with 4-5 tbsp of the batter. Make the liners are only ¾ filled.


Step 5

Tap the tray a couple of times against the counter and then place in the oven. Bake the muffins for 20-25 minutes or till a toothpick inserted in the middle comes out clean. Then take the tray out of the oven. Let muffins rest in the tray for 20 minutes, then serve.


Tips

  1. When caramelising the pears, regulate the heat accordingly.

  2. Replace the red pear with pears of your choice.

  3. Replace tea tree honey with the honey of your choice.

  4. Slightly cool the butter before adding it to the batter.

  5. Don’t use a hand beater to mix the batter, as it'll cause unnecessary air bubbles to the batter.
