Irish Potato Pie

Potato, bacon, and caramelized onions come together to create this explosive Irish potato pie. It's hands down the easiest pie to bake with readily available ingredients, and the simple yet eloquent flavours make you run for those calories. Caramelizing onions in bacon grease sets this rustic pie apart from the rest. This pie is creamy, delicious, and a lifesaver when you are short of time.

Serves: 8

Ingredients

3 slices Potatoes

1 minced Onion

200g chopped Bacon

1 ½ tsp Garlic powder

1 tsp Onion powder

1 tsp Black pepper

Salt to taste

½ cup Heavy cream

1 thawed Pastry sheet

1 tbsp Oil

Chopped Chive

Dill


Method

Step 1

Preheat the oven to 170℃. Grease a 9-inch pie dish with butter, then line the dish with thawed pastry sheet. Add oil to a pan and place on heat. Once hot, add chopped bacon and cook the bacon till it’s slightly crispy and brown.


Step 2

Then add chopped onion, garlic powder, black pepper, salt and onion powder. Caramelize the onions till slightly golden. Then add in potato slices and thoroughly coat the potatoes in bacon grease.


Step 3

Add the filling pie dish and evenly layer the potatoes. Drizzle heavy cream on top and place on the lowest rack of the oven. Back for 35-40 minutes or till the top layer is golden brown. Let the pie rest in the tin for 20 minutes, then garnish with fresh dill and chives. Serve hot!


Tips

  1. Don’t add a lot of oil to the pan while cooking bacon.

  2. Don’t de-starch the potatoes.

  3. Thaw the pastry sheet before using it.

  4. Bake the pie on the lowest rack to avoid burning the surface.
