Mushroom Bruschetta
The famous bruschetta from Italy. Hence also the most loved appetizer there is. It's the perfect balance of flavour and portion. 'Bruschetta' is derived from the word bruscare, meaning to roast over coal. Bruschetta is an integral part of an Italian BBq and can be served with various vegetables and meats. The olive oil-drenched sourdough served with earthy mushrooms makes the best bruschetta for me!

Serves: 4
Ingredients
2 chopped Garlic cloves
½ chopped Onion
1 ¼ cup chopped Mushrooms
¼ tsp Garlic powder
¼ tsp Onion powder
1 tsp Rosemary
Salt to taste
Olive Oil
4 Sourdough Slices
Parmesan
Method
Step 1
Add 2 tsp olive oil to a pan and place on high heat. Add chopped garlic and turn the heat to medium. Cook till the garlic is golden brown. Then add chopped onions to the pan and cook till the onions are slightly golden.
Step 2
Add the chopped mushrooms and mix thoroughly. Cook the mushrooms till they shrink to half their size. Add garlic powder, onion powder, salt to taste and rosemary. Stir well and cook for 2-3 minutes. Then take it off and keep it aside.
Step 3
In the same pan, add sourdough slices and drizzle olive oil. Then on high heat, roast the bread till golden brown and crunchy. Add the mushroom topping to the sourdough, grate some parmesan and serve!
Tips
Best made with porcini or wild mushrooms.
You can toast the sourdough in the toaster as well.
