Nutella Banana Muffins

Ultra-soft and moist banana muffins overloaded with Nutella. No other ingredient matches the simplicity of bananas, and they radiate comfort and warmth and take you back to your innocence. Pairing banana and Nutella is a match made in heaven. Both ingredients can be found in most pantries. These muffins can be whipped up in less than 30 minutes and take zero effort. The best mid-day dessert or a late-night snack, these muffins cover all grounds!

Serves: 5

Ingredients

2 cups Flour

2 mashed Bananas

1 Egg

½ cup Brown sugar

Pinch of Salt

1 tsp baking Soda

1 tsp baking Powder

¼ cup + 2 tbsp melted Butter

2 tsp Vanilla

10 tbsp Nutella

Mini dark Choco-chips


Method

Step 1- Nutella Disks

Add parchment paper to a baking tray/plate. Then drop 2 tbsp of Nutella in a disk shape and repeat till you have five disks. Place the tray/plate in the freezer for 30 minutes or until ready to use.


Step 2- Muffins

Preheat the oven to 180℃ and line a muffin tray with cupcake lines. Then add mashed bananas, egg, brown sugar and vanilla extract to a large bowl. With a wooden spoon, mix till all the ingredients form a semi-smooth batter.


Step 3

Then sift in the flour, baking powder, baking soda and salt to the batter. Fold in with the wooden spoon till all the ingredients are fully incorporated. Now fill ½ of the cupcake liners with the batter and then add the Nutella disk in the middle. Cover the Nutella disk with 2 tbsp of the batter.


Step 4

Add some mini dark choco-chip on top. Bang the tray against the countertop several times and place it in the oven. Bake the muffins for 20-25 minutes or till a toothpick inserted in the middle comes clean. Then take the tray out of the oven and let it sit for 20 minutes, then serve.


Tips

  1. Use over-ripped bananas for the best results.

  2. Slightly cool the butter before adding it to the batter.

  3. Don’t use a hand beater to mix the batter, as it’ll unnecessary air bubbles to the batter.
