Ooze Sandwich

A perfect brekkie sandwich with a beautiful oozing fried egg. It is stuffed with spiced bell peppers and mortadella. This sandwich is so easy to cook and is packed with flavours. The subtle taste of feta with the chilli garlic peppers gives you the kick you need for the day, and the lingering thyme sets you off to a great start. Try today to taste these flavours.

Serves: 1

Ingredients

2 chopped Garlic cloves

¼ chopped Red bell pepper

¼ chopped Yellow bell pepper

1 tsp Chilli paste

1 Thyme strand

1 Egg

2 Sourdough Slices

1 butter Lettuce leaf

1 slice Mortadella

Feta Spread


Method

Step 1

Place a pan on medium heat and add 1 tbsp oil. Once the oil is hot, add garlic cloves and cook till slightly brown. Then add red and yellow bell pepper and cook for 2-3 minutes. Then add thyme and red chilli paste.


Step 2

Cook the bell peppers for another 2-3 minutes on medium heat or till soft. Then take off the heat and keep it aside. In the same pan, crack an egg and cook for 2-3 minutes on medium-heat heat. Once the whites are set, remove the heat and keep it aside.


Step 3

Spread feta on both bread slices. Layer on bread slice with butter, lettuce and ham. Then add egg and bell pepper. Place the other on top and serve.


Tips

  1. While cooking the garlic, ensure the heat isn't too high; otherwise, the garlic might burn.

  2. To check if the bell peppers are fully cooked, pierce them with a fork.

  3. Don't cook the egg on high flame.

  4. You can use regular ham as well.

  5. Replace feta with bagel cream cheese.
