Panettone Bread Pudding

Looking for the perfect breakfast to serve your family on the morning of the following year? It's warm and cosy panettone bread pudding. All you need is your leftover panettone from the holidays and some eggs. This bread pudding stands apart cause it doesn't take away from the glorious panettone that is so flavourful in itself; you don't need anything else. The fruity and zesty flavours of the bread combined with the warm-toned spices create a beautiful dish worth waking up to!

Serves: 6

Ingredients

500g sliced Panettone Bread

4 Eggs

1 tsp cinnamon powder

¼ tsp Nutmeg powder

2 tsp Vanilla extract

1 cup Milk

¼ cup Heavy Cream

Blueberries

Strawberries

Dark chocolate chopped

Whipped Cream


Method

Step 1

Preheat the oven to 160℃. Grease a 12x12-inch baking dish with butter. Add eggs, cinnamon powder, nutmeg powder, and vanilla extract and whisk till no lumps remain. Then add in heavy cream and milk, and whisk till smooth.


Step 2

Line panettone slices in the baking dish and pour in your egg mixture. Make sure ¾ of your panettone is covered in the egg mix. Then place the dish in the oven and bake for 35 minutes or till the egg mixture is completely set.


Step 3

Let the pudding rest for 15-20 minutes. Then in blueberries, strawberries and chopped dark chocolate. Serve hot with some fresh whipped cream.


Tips

  1. Remember to grease the baking dish before baking to avoid the panettone from sticking to the bottom.

  2. You can granulate sugar in the egg mixture according to your preference.

  3. To check if the mixture is set, take a fork and press it against the bread. If you see the liquid coming out, bake the bread for about 5-10 minutes.
