Panettone French Toast

Panettone is a festive cake during the Christmas season. Even though panettone is considered a cake, it's more bread than cake; thus, making French toast from the leftovers is brilliant. These French toasts are rich in flavour, and due to the light, fluffy texture of panettone, these are lighter than air. I serve my French toast with a silky, smooth banana coconut cream that's easy and delicious; if you have leftover panettone, this recipe is for you.
Serves: 2
Ingredients
8 Panettone slices
4 Eggs
1 ½ cup Milk
1 tbsp Vanilla extract
6 tsp Vanilla sugar
4 tsp Cinnamon powder
1 tsp Nutmeg
Banana Coconut Cream
2 Banana
70g Cream Cheese*
400g Coconut cream
7-8 tbsp Granulated sugar
½ cup Heavy cream
4 drop food colour (option)
Method
Step 1- French Toast
Add egg, milk, cinnamon powder, sugar, nutmeg, and vanilla extract to a bowl. Whisk everything together till a smooth paste. Then in a deep tray, place panettone slices. Drizzle the French toast batter and let them sit for 20 minutes.
Step 2
Then grease a pan with butter, place on medium heat and add one slice of batter-dipped panettone. Cook for 2-3 minutes or till golden brown on each side. Repeat the process until all the slices are cooked.
Step 3- Banana Coconut Cream
In a bowl, add mash your bananas. Then add cream cheese, coconut cream, granulated sugar, heavy cream and food colouring. Beat on medium speed till thoroughly combined.
Step 4
Add panettone French toast on a plate with a dollop of banana coconut cream and serve with some fresh blueberries and strawberries.
Tips
Whish the batter smooth and avoid streaks of yolk.
If the pan gets too hot, sprinkle some water to prevent the burning of French toast.
You can also make the banana coconut cream with a whisk; it'll take a bit longer.
