Peach Blackberry Rolls
These light, fluffy and incredibly soft peach blackberry rolls are what summer dreams are made of. Peaches scream summer like no other stone fruit! They can be mild in their sweetness making them a perfect pair for vanilla. The blackberries compliment this dessert with their slightly tangy essence. The combination of these flavours is truly a unique taste experience. These rolls are the perfect dessert no matter what the occasion. They'll not only make your hearts warm but leave your home smelling like early Christmas.

Ingredients
Buns
3 cups Flour
Pinch of Salt
¾ cup Almond Milk
¼ cup + 1 tbsp granulated Sugar
57g unsalted Butter
1 tbsp Vanilla extract
2 Eggs
7g deactivated Yeast
600g canned Peach slices
50g Vanilla Sugar
Blackberry Compote
200g Blackberries
¼ cup granulated Sugar
¼ cup Water
1 ½ tbsp Lime Juice
2 tsp Lime zest
Blackberry Icing
2 tbsp Blackberry compote
¼ cup Heavy Cream
1 cup Icing sugar
Method
Step 1- Buns
Add ¼ cup almond milk to a heatproof bowl and place it in the microwave. Heat the milk to a lukewarm temperature. Then add in sugar and yeast mix till lump-free and place the bowl in a dark warm place for 10 minutes or till the yeast is fully activated.
Step 2
Add the rest of the milk to a saucepan and place it on the lowest heat. Add butter and vanilla extract to the saucepan and with a rubber spatula stir occasionally till the butter fully melts. Then take off heat and keep aside.
Step 3
Add eggs and sugar to a large bowl, whisk the two together till doubles in size and sugar completely dissolves. Then add the warmed milk with butter and vanilla extract to the bowl and whisk till all the ingredients are fully incorporated.
Step 4
Now add in the activated yeast and whisk again till fully incorporated. Then sift in the flour one cup at a time and with a wooden spoon fold in the flour. Once all the flour is mixed in, sprinkle the salt and fold in.
Step 5
Heavily flour the counter and transfer the dough. With flour coated, hands knead the dough for 5 minutes. Then lightly oil the bowl and transfer back the dough. Cover the bowl with a kitchen towel for an hour or till the dough doubles in size. Once the dough doubles in, deflate the dough and let it rise again.
Step 6- Vanilla Peach
Drain the canned peach slices, then chop the slices into bite-size pieces. Add the chopped peaches to a bowl. Sprinkle vanilla sugar and mix till fully incorporated. With a fork, mash the peaches till semi-mashed.
Step 7- Blackberry Compote
Add blackberries, sugar, water, lime juice and lime zest to a saucepan. Reserve ¼ of the blackberries then place the saucepan on medium heat. Let the berries soften and stir occasionally.
Step 8
Once the berries soften, mash occasionally till the consistency is jam-like. Then add the reserved berries and cook for another 3-4 minutes. Then take off heat and let it cool down to room temperature.
Step 9- Baking
Preheat the oven 180℃ and grease a 9x9 inch pan with oil/butter. Lightly flour the counter and transfer the dough. With a rolling pin, flatten the dough into a 14x9 inch rectangle with 1-inch thickness.
Step 10
Spread the peaches evenly on the flattened dough. Add the blackberry compote, reserve 2 tbsp for later. Spread the compote on the peaches. Then roll the dough tightly and seal the dough from the ends.
Step 11
With a dental floss cut the roll into 1-inch sections and place them in the greased dish. Cover the dish with a kitchen towel and let the rolls rest for 20 minutes. Then place the dish in the oven and bake for 20-25 minutes or till the edges are golden brown. Once the rolls are baked take the dish out of the oven and let them rest for 40-50 minutes.
Step 12- Blackberry Icing
Add 2 tbsp blackberry compote and heavy cream to a bowl and with a whisk till smooth. Then sift in icing sugar and whisk till all the ingredients are fully incorporated.
Step 13- Assembly
Drizzle the icing sugar on the baked rolls and with a sharp knife cut into 9 rolls. Sprinkle some lime zest and serve immediately.
Tips
Make sure your milk is lukewarm, if hotter wait for it to cool down otherwise you might kill the yeast.
If using activated yeast, you can directly add it to the ingredients, skip step 1.
When beating the eggs and sugar make sure the dissolves for softer rolls.
The dough tends to be a little sticky, so flour the surface and your hands well before kneading.
Remember to deflate the dough so it can rise again for fluffy rolls.
Drain the peaches well before using.
Make sure to stir the compote from time to time to avoid burning.
Only use the compote ones it’s completely cool.
You might need to trim the edges of the flatten dough before rolling as the edges might not be covered with peaches or blackberry compote.
Whisk the icing till its lump-free. If you want a runny icing, you can reduce the amount of icing sugar.
