Roasted Tomato Soup

The top trending soup on social media has found its way to my kitchen. I have perfected this recipe that delivers the perfect sweet-tangy tomato soup. The roasted vegetables add an 'oomph' effect, and the basil leaves provide a lovely hint of freshness. This soup is the best comfort food and is super easy to make with minimum time behind the stove. Try this recipe today, and it'll lift your spirits!

Serves: 3

Ingredients

3 Tomatoes

½ Yellow bell pepper

1½ Red bell pepper

1 Garlic bulb

Olive oil

Salt to taste

Chilli flakes to taste

1 cup Vegetable stock

1 cup Heavy cream

⅓ cup Basil leaves

Grilled Cheese Sandwich

60g Butter

6 slices Bread

6 slices Mozzarella

6 tbsp Cheddar

Method

Step 1- Soup

Preheat the oven to 200°c. Cut tomatoes, red bell pepper and yellow bell pepper into whole halves. Cut the root of the garlic bulb. Add the vegetables to a baking tray. Then drizzle olive oil generously. Sprinkle salt and chilli flakes over the vegetables. Place in the oven and roast for 45 minutes or till the vegetables are a little charred.


Step 2

Once all the veggies are roasted, let them rest for 5-10 minutes. Then press the cloves out of the garlic bulb. Transfer the vegetables to a blender and add basil leaves. Then blend till smooth paste. Then transfer the paste to a deep bottom pot. Add vegetable stock and cream to the pot and cook until it boils. Then reduce the heat and cook till thick.


Step 3- Grilled Cheese

To a pan, add drizzle 1 tbsp olive oil. Then add 20g of butter to the pan; once the butter melts, add 2 bread slices. Let the bread sizzle to form a golden crust. Then flip the bread and place mozzarella slice and cheddar on one bread slice and place the other bread on top. Press gently and cook for 2-3 minutes on medium-low heat. Then flip and repeat till a golden crust. Serve hot with soup.


Tips

  1. Don't roast chopped vegetables. Make sure they are whole.

  2. Make sure not to over-roast the vegetables. Keep an eye from time to time.

  3. You can also blend the vegetables in a pot with a hand mixer.

  4. You can add 3-4 drops per bowl of balsamic vinegar to enhance flavour.

  5. When making grilled cheese adjust the heat according to the crust you want.
