Rocky Road Brownie

The holidays can be hectic and time-consuming, these brownies are the perfect dessert to whip up in a rush. These decadent brownies are gooey, soft and melt in your mouth. Covered in fluffy chocolate-coated marshmallows and loaded with fresh raspberries and nuts. The combination of brownies and rocky roads is a match made in heaven. The surprise crunch of rocky roads in these ultra-soft brownies is just to die for! If you are looking for an easy yet delicious dessert for the holidays you have landed on the right recipe!

Serves: 9

Ingredients

Brownie

250g dark Chocolate

250g unsalted Butter

3 Eggs

1 tsp Vanilla extract

¼ cup Granulated sugar

¾ cup Brown sugar

¾ cup Flour

¼ cup Cocoa powder

125g Rasberry

⅔ cup Trail mix

Rocky Road

200g milk Chocolate

1 cup Marshmallows



Method

Step 1- Brownie

Preheat the oven to 180℃. Line a 9x9-inch baking tin with parchment paper. Fill a saucepan with ¼ water and place on high heat to boil. Once boiling in a heatproof bowl, add butter cubes and chopped chocolate. Place on the pan and bring the heat to a medium-low.


Step 2

Once the chocolate and butter melt, remove the bowl from the heat and wipe the bottom. In a separate bowl, sift flour, cocoa powder and salt. Whisk till combined.


Step 3

Now add eggs to the melted chocolate and butter one at a time. Whisk till combined. Then add brown sugar and granulated sugar, and whisk till combined. Then add vanilla extract and whisk till smooth. Scrap the bowl down from time to time.


Step 4

Now add the dry ingredients to the bowl and whisk until all the ingredients are thoroughly combined. Add raspberries and the trail mix; with a rubber spatula, gently mix in the batter. Transfer the batter to the baking tin.


Step 5

Place the baking tray in the oven and bake for 30-35 minutes. Then take out the tray and let it rest for 5-10 minutes.


Step 6- Rocky Roads

In a bowl, add chopped chocolate and then place in the microwave for 30 seconds, 2-3 times or till the chocolate melts. Then add marshmallows and a rubber spatula mix in.


Step 7- Assembly

Add the rocky road mix to the brownies and spread evenly with an offset spatula. Then let the brownie rest till it sets. Transfer the brownies to a cutting board, then with a sharp knife, cut the brownies into squares and serve!


Tips

  1. Use the 8x8 inch baking tray and put aside 1/4 cup brownie batter.

  2. While melting chocolate and butter, ensure the water in the saucepan doesn't touch the bottom of the bowl.

  3. Once the chocolate and butter are melted, wipe the bottom of the bowl to avoid condensation.

  4. To avoid flour lumps in the batter, sift all the dry ingredients.

  5. If you want a cakey brownie, bake it for 25-30 minutes.

  6. Only take the brownies out of the tin once the marshmallows harden.
