Rocky Roads

An Australian delicacy that is a national favourite, it's a homemade chocolate bar with numerous flavourings. Rocky Road dates back to 1853 when it was invented to sell old confectionary shipped from Europe mixed in chocolate and nuts to mask the stale flavours. As revolting as that, maybe today it's made with fresh ingredients and tastes heavenly. It's an effortless dessert and provides an opportunity to play with flavours.

Serves: 8
Ingredients
400g chopped Dark chocolate
1 cup Marshmallows
½ cup assorted Nuts
Method
Step 1
Fill ¼ of a saucepan with water. Place on high heat and bring to a boil. Then place a heatproof bowl filled with dark chocolate and bring the heat to a medium-low.
Step 2
With a rubber spatula, fold in the chocolate pieces. Once melted, remove the bowl from heat and clean the bottom of the bowl.
Step 3
Then add nuts and marshmallows to the chocolate, and with a rubber spatula, fold them in. Now spread the chocolate mix in a 4x4 inch square baking tin. Place in the freezer for 2 hours.
Step 4
Then invert the tin on a plate. Cut the rocky roads into bites and serve.
Tips
You can substitute 200g of milk chocolate for a sweeter taste.
Clean the water droplets from the bottom of the bowl to prevent condensation.
You can more toppings to your rocky roads; there isn't a right way to make it!
