Rum Chocolate Cherry Muffins

This is a beautiful quick-bake dessert, and it's effortless and makes delicious soft, moist muffins. I baked these beauties at midnight for a picnic the next day, which turned out to be the menu's highlight. The sweet bursts of cherries with bittersweet flavours of dark chocolate and rum give a wholesome experience. This one calls out for you if you want a quick, easy recipe.

Ingredients

1 cup Flour

½ cup Cocoa powder

1 tsp Baking powder

1 tsp Baking soda

¼ cup Granulated sugar

¼ cup Brown sugar

1 egg

50g Unsalted butter* melted

¾ cup Milk

30 ml Rum

¾ cup Dark chocochips

¾ cup cut Cherries



Method

Step 1

Sift flour, baking soda, baking powder, granulated sugar, and cocoa powder in a bowl. Mix well.


Step 2

Add slightly cooled butter, egg, brown sugar, and milk to another bowl. With a whisk till all the ingredients are combined.


Step 3

Add the wet ingredients to the dry ingredients. Start mixing with a fork. The batter might be sticky.


Step 4

Gradually mix everything. Once everything is mixed, add rum. Mix well.


Step 5

Then add cherries and chocochips with a spatula and mix well.


Step 6

Preheat the oven to 190°c. Line a muffin tray with cupcakes liners.


Step 7

Now fill ⅔ of the batter in the liner, and add some choco-chips and cherries on top. Bake for 15-20 minutes.


Step 8

To check if the muffins are done, insert a toothpick in the middle and see if it comes out clean.


Step 9

Once the muffins are done, take them out of the tray, place them on a cooling rack for 3-5 minutes, and serve.


Tips

  1. Slightly cool the butter before adding it to other wet ingredients.

  2. You can replace the rum with a cherry liqueur to enhance the flavour of the cherry.
