Sour Cream Parfait

Parfait translates to 'perfect' in french. This parfait is derived from the American version of a parfait. It makes a great breakfast, dessert or even a snack. The sour cream yoghurt is creamy, silky and rich. My choice of fruit was berries, but the best if you can choose your favourites and it'll still taste delicious. The crunch of granola takes you home. This jar is pure joy to devour, and it hardly takes time to put together!

Serves: 2

Ingredients

Sour Cream Yogurt

1 cup Sour Cream

⅓ cup Heavy Cream

½ cup Granulated Sugar

2 tsp Lemon Zest

1 tsp Vanilla Extract

Blueberry Sauce

175g Blackberries

125g Blueberries

¼ cup Granulated Sugar

1 tsp Lemon Zest

Toppings

12 tbsp Granola

Powdered Sugar

Fresh Blueberries


Method

Step 1- Blueberry Sauce

Add blackberries, lemon zest and granulated sugar. With a fork, mash the berries into the sugar. Once all the berries are mashed in and you have a thick paste, add the blueberries and fold. Let them sit for 15-20 minutes.


Step 2- Sour Cream Yogurt

Add sour cream, heavy cream, lemon zest, vanilla extract and granulated sugar. Whisk till creamy and smooth, then add to a pipping bag and place in the refrigerator till ready to use.


Step 3- Assembly

Add 3 tbsp granola to a mason jar and layer it with 3 tbsp blueberry sauce. Then pipe your sour cream yoghurt and repeat the steps again. Cover the jar and place it in the freezer for an hour or overnight. Then top with fresh berries and powdered sugar.


Tips

  1. You can skip adding sugar to the sour cream yoghurt.

  2. For best results, freeze overnight.

  3. Don’t use an electric beater to whisk the yoghurt.
