Fried Chicken Sandwich

Who doesn't love a spicy fried chicken, coleslaw loaded sandwich! This recipe is easy to make and has the best outcomes. Fried Chicken is the ultimate comfort food. With a crispy outside and a juicy tender inside, this chicken is like a huge cosy hug for the heart. I can guarantee this recipe to lift your sprites high with every bite.

Serves : 4

Ingredients

Fried Chicken

500g Chicken Thighs

2 Tbsp Lemon juice

3 tsp Peri Peri Nando's salt

3 tsp garlic salt

1 tsp pepper

3 cup vegetable oil

Salt to taste

2 cup flour

Coleslaw

100g sliced cabbage

100g sliced purple cabbage

150g sliced carrot

50g spring onions

½ chopped jalapeno

½ chopped jerkins

2 cup mayonnaise

8 white bread slices

Nando's Garlic medium spicy sauce


Method


Step 1

Take your chicken thighs and clean the things thoroughly.


Step 2

Pat them dry and with a sharp knife cut all the fat out.


Step 3

Now slit the thigh horizontally making two pieces of the thigh opening up like wings.


Step 4

Now cover the thighs with a cling wrap and with a rolling pin beat then flat.


Step 5

In a bowl add lemon juice, peri peri salt, pepper and garlic salt. Mix well and add your thighs to the marinate and coat well.


Step 6

Place them in the refrigerator for a minimum of 2 hours or overnight for best results.


Step 7 - Coleslaw

Now in a salad bowl add your cabbage, purple cabbage, carrot, spring onions, jalapenos and jerkins and mayonnaise, mix well.


Step 8 - Fried Chicken

Now take your chicken thighs out of the refrigerator and in a medium sized bowl add chilled water.


Step 9

Now in a plate add your flour 1 tsp peri peri salt, garlic powder and salt to taste, mix well.


Step 10

Now coat your thigh in the flour and then dip it in the cold water for 30 seconds with a skimmer.


Step 11

Then take out the thigh and coat it with flour again thoroughly.


Step 12

Let the thigh rest for 2-4 minutes. Meanwhile in a deep pan add vegetable oil and keep it on high flame.


Step 13

Once the oil is hot add your flour coated thigh to the oil and fry till golden brown on both sides


Step 14

Once the thighs are fried pat down excess oil.


Step 15 - Assembly

Take two slices of your white bread and add 2 Tbsp of coleslaw on both sides, place two pieces of the fried chicken and drizzle garlic sauce on the chicken and place the other white bread on top of the chicken and serve.


Tips

  1. Don't skip marinating the chicken as it gives chicken a good texture and flavour.

  2. To check if the chicken is cooked while frying insert a kitchen thermometer and it should read 74°C. Alternatively make a small cut in the middle and juices inside should be transparent.
