Tandoori Chicken Pizza
A little Indian twist to your regular old Italian pizza crust and magic is born. This pizza is loaded with spices, tender chicken and a customized pizza sauce. Ingredients
Tandoori Chicken
150g diced Chicken thighs
1 tbsp Yogurt
½ tbsp Lemon juice
½ tsp Turmeric
2 tsp Kashmiri Chilli powder
2 tsp Coriander powder
1 tsp Fenugreek powder
½ tsp Cumin powder
1 ½ tsp Amchur
3g Fenugreek leaves
2 tbsp Oil
Pizza Sauce
3 tsp Oil
2 chopped Garlic cloves
½ cup minced Onion
¾ cup Tomato puree
1 tbsp Pizza sauce
2 chopped green Chilli
Salt to Taste
1 tsp Coriander powder
½ tsp Chilli powder
½ tsp Amchur powder
2 tsp Oregano
½ tsp Turmeric
1 tsp Fenugreek powder
Pizza Dough
2 cups Flour
¾ cup Lukewarm water
7g inactive Yeast
3-4 tbsp Olive oil
1 tbsp Sugar
Salt to taste

Green Capsicum Slices
10g Mozzarella
Method
Step 1- Tandoori Chicken
Add yoghurt, lemon juice, turmeric, Kashmiri chilli powder, coriander powder, fenugreek powder, cumin powder, amchur powder and fenugreek leaves to a bowl. Mix well and add in chicken pieces. Coat the chicken well, cover the bowl, and place in the refrigerator for 2 hours or overnight.
Step 2
Then add oil to a pan and place on high heat. Once hot, add in chicken pieces. Reduce the heat to medium and cook the chicken for 6-7 minutes or till slightly brown. Keep toasting the chicken from time to time.
Step 3- Pizza Base
Add lukewarm water, sugar and yeast in a bowl and mix well. Place the bowl in a dark warm place like a microwave for 5-7 minutes or till yeast forms a frothy layer on top. Sift flour and salt in a large mixing bowl and create a well in the middle. Then add yeast water to the well, and with a fork, start mixing in the flour.
Step 5
Once all the dough sticks together, lightly flour the counter and transfer the dough. Start kneading the dough on the counter until it becomes soft and bouncy. Then lightly oil a bowl and transfer the dough to the bowl. Cover with a kitchen towel and let it rest for 1-2 hours or until the dough doubles.
Step 6- Pizza Sauce
Add oil to a saucepan and place on medium heat. Once hot, add in chopped garlic and cook till slightly brown. Then add in the minced onion and green chillies and cook till transparent. Add the tomato puree, reduce the heat to a medium-low, and cook for 10-15 minutes or until the oil separates from the masala.
Step 7
Add pizza sauce, turmeric powder, chilli powder, coriander powder, salt, amchur powder, fenugreek powder and oregano to the pan. Mix well, and add a little water if needed. Let the sauce bubble for 5-6 minutes. Then take it off heat.
Step 8- Assembly
Preheat the oven to 200℃. Lightly grease a 13-inch pizza tray with oil or butter. Knead the dough for 5-10 minutes on a dusted counter. Then stretch the dough gently on the pizza tray until it covers the whole tray. Fold the edges inwards to create a crust. Poke holes in the base with a fork.
Step 9
Evenly spread the pizza sauce on the base and add chicken pieces, onion slices and green capsicum. Spread the mozzarella on top and bake for 10-15 minutes. Then take the tray out and serve hot with chilli flakes and dried oregano.
Tips
Marinate the chicken overnight for the best results.
The internal temperature of cooked chicken is 74℃.
Adding hot water to yeast will kill it; ensure it is lukewarm.
Add the yeast to the flour once it is frothy.
The longer you need your dough, the softer it will be.
Leave the dough to rise in a warm place like an oven or microwave.
Cook the pizza sauce for as long as you can.
You can also stretch the dough with a rolling pin into the desired shape.
