Vietnamese Shrimp Rolls

Vietnamese rolls are super healthy and fresh. I filled my rolls with beautifully cooked garlic shrimp. The shrimp brings the heat and spice to these rolls, while the veggies bring the freshness and crunch. Served a homemade peanut sauce, these rolls are to die for. Try these out to find out for yourself!

Serves: 4

Ingredients

250g Shrimp

8 Rice papers

138 g Egg noodles

2 Tbsp Lemon juice

2 Tsp Mirin sauce

1 Tsp Chilli paste

2 Tbsp sesame oil

1 Tsp Garlic paste

3 Tbsp Soy sauce

5g Coriander leaves

2 medium-sized carrots

10g Iceberg lettuce

10g Purple cabbage

Peanut Sauce

⅓ Cup Peanut butter

1 Tbsp Tamari sauce

2 Tsp Honey

1 Tsp Chilli paste

3 crushed Garlic cloves

4 Tbsp water


Method

Step 1- Marinade

Clean your shrimp thoroughly. Add lemon juice, mirin sauce, chilli paste, and shrimp to a bowl. Mix well. Cover the bowl and refrigerate for 30 minutes.


Step 2- Noodles

In a deep pan, add lots of water and bring it to a boil. Then add your noodles and cook them for 4 minutes or according to the packet instructions. After 4 minutes, drain the noodles and keep them aside.


Step 3

In a pan, add oil; once hot, add garlic paste, and cook till the raw garlic paste; add your shrimp. Season your shrimp with salt and white pepper. Cook on medium-high heat for 3-4 minutes or till the prawns are easy to break.


Step 4

Then add your noodles and mix well. Cook for another 1-2 minutes, remove the heat and keep aside. Now julienne, cut your carrots, cabbages and iceberg lettuce.


Step 5

Add lukewarm water to a deep plate and dip your rice paper in water for 20-30 seconds. Now take the rice paper out and lay it flat on a clean surface. Now start placing your veggies one by one.


Step 6

Add 3-4 pieces of carrot, 2-3 wedges of cabbage, a handful of iceberg lettuce and coriander leaves. Then add one serving of prawn noodles, wrap the rice paper tightly around the stuffing, and roll them till appropriately sealed. Keep aside.


Step 7 - Peanut Sauce

Add peanut butter, tamari, honey, chilli paste, garlic cloves, and water in a blender.

Blend into a smooth paste.


Step 8

Put the sauce in a bowl garnished with some peanuts and serve aside with the rolls.


Tips

  1. Don't skip marinating the shrimp, as it helps enhance flavour and texture.

  2. Make sure not to overcook your prawns. Keep a close eye.

  3. Make sure only dip your rice paper for the given time. If left for longer in water, they can become chewy.

  4. Sealing the rolls, so they stay sturdy.

  5. Don't keep the rolls in the fridge for more than 2-3 days.
